EBLEX has produced a unique offal and variety meats processing and packaging guide for English processors.
It outlines the recognised standard specifications for all of the non-carcase meat products there is a market for globally and includes translations of the names for the products in the primary export markets.
There has been a significant shift in the beef and sheep co-products exported.
In 2014 the UK exported 47,000 tonnes of offal – up 28 per cent on 2013 – contributing £67m to the UK economy.
The guide is available from Christine.Walsh@ahdb.org.uk.
